Green Charcuterie Board

Charcuterie boards have become a popular option for serving delicious and visually appealing appetizers. While many charcuterie boards feature meat and cheese, a plant-based charcuterie board can be just as delicious and satisfying. I recently attended a Charcuterie Color Board party. Naturally, I chose green. I was inspired by flowers blooming in Spring. Here is what I included on my board along with the key benefits.

Asparagus

Asparagus is a nutrient-packed vegetable that is low in calories and high in fiber, vitamins, and minerals. Asparagus is a good source of vitamin C, vitamin K, folate, and potassium. It also contains antioxidants that help protect against chronic diseases such as cancer and heart disease.

Cucumbers

Spinach

Pistachios

Irish Cheese

A charcuterie board wouldn't be complete without cheese. This is Irish Cheese from the famous Murray's. Kept moist and crumbly inside an ever-so-Irish green wax rind, Murray’s Irish Cheddar is a buttery beauty that embodies the lush grassiness of Ireland’s rolling pastures. It contains high levels of calcium, beta-carotene, and omega 3's.
