While all the mixes from the brand are great, the carrot cake might be our new favorite. The flavor profile is complex and delightful. The cake was light and fluffy. My two year old kept asking for more (and we know how picky kids can be), it was gone within a day.

Carrot Cake & Cupcakes Plant-Based Baking Mix

I'm really sorry to say this, but this mix was awful. The batter was very lumpy, too thick and dense, didn't rise, and didn't taste like carrot cake. The cake was only about 1/2" high after baking exactly as the instructions said. I used avocado oil and walnut milk.
Additionally I tried using swerve for the frosting recipe that you sent and it turned out like wet, lumpy cottage cheese. Next time I make cream cheese frosting I will use your recommendation of monk fruit eritherol.

Jennifer, I am so sorry to hear about your experience. I haven't personally tested it with walnut milk, but I don't think that should have made a difference. I'm also sorry to hear about the bad experience with Swerve. I've never used it before so not sure how it chemically reacts with other ingredients.
