2 c Plant Milk

2/3 c Sweet Potatoes, steamed, mashed, and cooled
Directions

Whisk together pancake mix, plant milk, and oil. Add sweet potatoes and stir until combined

Heat griddle to medium heat. Scoop out 1/4 cup of batter onto pan. Cook until bubbles form (~5 minutes - these take a little longer than normal due to the sweet potatoes). Flip and cook for another ~5 minutes.
