Sweet Potato Pancakes

Flippin' out over here for National Vegetarian Month! Just whipped up a stack of sweet potato pancakes using our amazing vegan, gluten-free, and top 9 allergen-free Oatmeal Pancake & Waffle Mix. It's a brunch win-win! Did you know sweet potatoes are not only delicious but also packed with beta carotene and fiber? So it's a double win for your taste buds and your health! 

Here’s how to make them:

Ingredients:

  • Bake Me Healthy Oatmeal Pancake & Waffle Mix

  • 2 c Plant Milk

  • 2 tbsp Oil

  • 2/3 c Sweet Potatoes, steamed, mashed, and cooled

Directions

  1. Whisk together pancake mix, plant milk, and oil. Add sweet potatoes and stir until combined

  2. Heat griddle to medium heat. Scoop out 1/4 cup of batter onto pan. Cook until bubbles form (~5 minutes - these take a little longer than normal due to the sweet potatoes). Flip and cook for another ~5 minutes.

  3. Top with your favorite toppings like pumpkin seeds and maple syrup.
