Made with Upcycled Ugly Carrots
Did you know that āuglyā carrots are just as tasty as their more aesthetically pleasing counterparts? By using upcycled ugly carrots, weāre not only reducing food waste but also creating a cake thatās full of natural sweetness and rich in nutrients. Itās a win-win!
Letās Get Baking!
Our baking mix is designed to be incredibly easy to use. Hereās how you can whip up our mouth-watering carrot cake with just a few simple steps:
Ingredients:
- 1Ā Bake Me HealthyĀ Gluten-Free, Vegan, Top 9 Allergen-Free Carrot Cake & Cupcakes baking mix
- 1/3 c Oil (your choiceāavocado, vegetable, or any neutral-flavored oil will do)
- 1 c of your favorite milk (we love almond, oat, or soy milk for this recipe)
Instructions:
- Preheat your oven to 350Ā°F (175Ā°C). Grease and flour your cake pan (makes one 8" cake or two 6" cakes)
- Mix it up: In a large bowl, combine our baking mix with the oil and milk. Stir until smooth and well-blended.
- Bake: Pour the batter into your prepared pan or cupcake tin. Bake for 20-25Ā minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cake to cool completely before frosting.
Top It Off with Vegan Buttercream
No cake is complete without a luscious layer of frosting. Our favorite is a classic vegan buttercream. Hereās a quick recipe:
Vegan Buttercream Frosting:
- 1 cup vegan butter, softened
- 2 cup powdered sugar
- 2-3 tbsp non-dairy milk
- 1 tsp vanilla extract
- In a large bowl, beat the softened vegan butter until creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Add the non-dairy milk and vanilla extract, and continue to beat until light and fluffy.
- Spread the buttercream over your cooled carrot cake or cupcakes. Decorate with a sprinkle of cinnamon or some cute carrot decorations for that extra festive touch!
